Dutch Babies

This is a very easy puffy pancake baked in a pie plate in the oven. I thought the name of the recipe was funny so I thought I would try it out. I have been making this for decades now and one of my favorites. Very easy to make and lots of fun for the kids to watch it get puffy and deflate a bit. Great for special occasion breakfast.

Dutch Babies (serves 4)

2 tablespoons of butter or margarine

3 eggs

1/2 cup of flour

1/2 cup of milk

1/2 teaspoon of salt

Preheat oven to 425 degrees

Place the butter/margarine in a glass pie plate or a heavy 10 inch skillet.

Place in the oven and let the butter melt.

In a medium sized mixing bowl, hand beat the eggs vigorously add the flour a little bit at a time, then add the milk. Beat till no lumps remain.

When the butter is melted, pour the batter into the pie plate or skillet and bake for 20 minutes.

Let it rest for 5 minutes then cut into wedges.

Serve with maple syrup, table syrup, fruit syrup, jams, or powdered confectioner's sugar.
